RECIPES FOR EVERYONE

In 2015 I had a sudden realisation that I wanted my diet to reflect my beliefs about the world. It no longer made sense to me to continue eating animal products, as I wanted to embody equality in all its forms. I have deep care, appreciation and love for the Earth. I wanted to show this on my plate. I am privileged in that I have been able to switch to a more plant-based lifestyle.
I had been vegetarian for 3 years before moving to university in Dublin and adopting a vegan diet. Although, like any normal person, I do have my slip-ups! Being plant-based for me includes a lot of meat substitutes and experimenting more with recipes.
