Healthy Plant-based Chocolate Cookies

This recipe makes about 10-12 cookies, but they will be finished before you have time to count!


180g plain flour

3/4 tsp baking soda

1/2 tsp salt (and some more to sprinkle on top after being cooked)

1tsp vanilla essence

60g sugar (I do around 50/50 of caster sugar and light brown sugar)

60g melted coconut oil

1 mashed banana

3 tbsp chia seeds mixed with a bit of hot water (it creates a binding agent, similar to eggs)

50g of crushed up dark chocolate

*optional to add some flaxseeds too.*


Combine all the dry ingredients (flour, baking soda, salt, sugar, flaxseeds) and mix well.

Add the wet ingredients (coconut oil, vanilla essence, banana and chia seeds) to the dry ingredients.

- Feel free to add in more flour if they are a bit too wet!

Add in the crushed up chocolate.

Roll sections of the mixture into balls and spread evenly on a tray with baking sheet parchment.

Cook in the oven for 8-12 minutes at 180 degrees celsius.

Once out of the oven, place on a cooling rack and sprinkle with a few salt flakes.
